Armed with a shaker, a disturbingly high IQ, and the dry wit of a British barfly, Matty Eggleston started out in the restaurant industry as a server and bartender at Chicago's Red Light. Eggleston's seasonal depression and fascination for developing new beverages then took him to California where he bartended at The Hungry Cat, Wurstkuche and the Varnish, in Los Angeles. He, then, headed up the coast where he bartended at San Francisco's famed speakeasy Bourbon and Branch and Smuggler's Cove. After stints at Graham Elliot and Bar Deville, Matty now flexes his muscles at Perennial Virant, where he aligns his specialty cocktail list with chef Virant's menu philosophy and utilizes the fresh flavors and local produce of the market.
