Growing up in Michigan and the Philippines has definitely created a diverse outlook in regards to food for Carlo. From good old steak and potatoes to rice and pork adobo, he has realized the true diversity in food cultures growing up and has enjoyed the many different flavors the world has to offer.

Earning degrees from Macomb Community College and the Culinary Institute of America has provided a unique opportunity to explore the many different facets of the industry and has also brought him abroad to Europe and Asia.

His passion for food was ignited by his family and can tell you many stories from his childhood, from almost burning down the kitchen while making French fries with his older siblings to late night dinners after work with his mom and dad.

Now, here in Chicago with Perennial Virant, he enjoys bringing his love for food and the seasons to customers alongside Chef Paul Virant.
